Crepes make breakfast special

Breakfast, petit dejeuner, ontbijt. Whatever you want to call it, the first meal of the day is important. But sometimes you really want breakfast to be special, but without too much effort. Mornings are not usually my best time, so a breakfast that requires little effort is pretty important. And to that end, to impress people on special occasions, or just for the sake of extreme decadence, I offer to you crepes avec ganache et fraises (or, really thin pancakes with awesome chocolate sauce and strawberries). It’s pretty fast, pretty easy, and everyone always loves it. So, here’s the method…

For the Crepes…

You’ll need:

4 eggs, lightly beaten; 1 1/3 cups milk; 2 tablespoons butter, melted; 1 cup all-purpose flour; 2 tablespoons white sugar; 1/2 teaspoon salt

To make them:

Place the dry ingredients in a large bowl; in a separate bowl, beat the eggs lightly, and then add the milk. Add the melted butter to the dry ingredients, and then add about a third of the milk and eggs. I find a whisk to be the best tool, so whisk the eggs and milk into the dry ingredients, adding another third of the mixture each time.

Next comes the easy bit (sort of); using a good non-stick pan (seriously, this will save you a lot of hassle), place a ladleful of mixture in the pan. Roll the pan a little, so the mixture is spread on the pan. Cook it on a medium heat for about two-minutes, flip it and repeat the process until you have a lot of amazing crepes.

For the Strawberries

You’ll need:

To make them:

Cut up some strawberries

For the Ganache

You’ll need:

100 g of the best dark chocolate (I don’t like it with milk chocolate or white chocolate, so try it, maybe that’s your thing); 100 g cream

To make it:

Heat the cream in a small pan until it’s boiling. Remove it from the heat, and whisk the chocolate into the cream, until it’s smooth and chocoloately goodness is irresistable.

For the crepes avec ganache et fraises

You’ll need:

All of the above

To make it:

Place the strawberries in the crepe, cover in ganache. Roll it up. Repeat, cover in some more ganache and top with strawberries. Then eat it in the sun, preferably in the garden, in the summer.

    • If I can make them, anyone can. Try it! The worst that can happen is that you…. I don’t know… let’s think positive instead! Good luck!
